This is a favourite in my family. And best of all, it’s quick to make. As I don’t have a picture of the cake, here is a drawing instead. I’ve titled it Pear Girl with Dog.
150g icing sugar
150g soft butter
150g plain flour
1 T baking powder
dash of vanilla
brown sugar for sprinkling
Beat together sugar, butter, plain flour, baking powder and vanilla. Pour into 20cm greased springform cake tin.
Peel and quarter pears. Layer gently on top of the batter.
Bake for 20 minutes then sprinkle brown sugar over the top and bake a further 25 minutes. If the cake is browning too quickly cover with tin foil.
Serve hot with cream or icecream.
