These are my favorite cookies. They are crunchy and delicious.
ALMOND COCONUT COOKIES
Pre heat oven to 180C.
BEAT:
4ozs butter
1 C sugar to light & fluffy cream.
ADD:
1 egg
1 Cup Self Raising flour
1 Cup coconut
1 Cup lightly roasted almond slivers
1 C cornflakes (or rice bubbles)
Grease or line tray with baking paper.
Roll mixture into balls about walnut size.
Place on tray leaving space between each biscuit as they spread.
Press down slightly with fork.
ENJOY
